Sencha green tea
The flavor and freshness of sencha is preserved by steaming, then drying and rolling the leaves, rather than fermenting them.
Preparation of Japanese Sencha (green tea)In Japan, tea is traditionally prepared in a special Japanese teapot called a kyusu. Japanese Sencha should be brewed in hot water (around 80°C to 90°C). It is at a lower temperature than most European teas.
- Boil water in a kettle. Pour the water into each cup you wish to serve. This will allow the water to cool to around 80°C for brewing.
- Put 1 teaspoon (about 6g/200tsp) of tea leaves into the kyusu for each serving you want to prepare.
- Pour the water from each cup into the kyusu teapot. Let the tea leaves steep for about 40 to 50 seconds.
- Use the kyusu to pour the tea into each cup. Be sure to use a filter if necessary.
