In 1987, this company was the first in Japan to experiment with cold aging. Sake, stored at an average temperature of 0°C, with 100% humidity and without air circulation, preserves the freshness of fresh sake. while developing a softer texture and a rounder flavor, without any astringency. It was released in April in a limited edition.
