

We offer you a new way to enjoy soba, which is not limited to dipping it in sauce. From Nagano, the land of true Shinshū soba, we bring you a new form of soba: buckwheat noodles . Buckwheat grains grown in Nagano, rich in aroma, are specially crushed for making pasta. Mixed with durum wheat semolina and Nagano wheat flour , they are transformed into real artisan short pasta using a pasta machine imported directly from Italy. Thanks to slow and careful drying , this pasta offers all the flavor of buckwheat and an incomparable soft texture .
