Kisoji mitake soba
Under the cool air of the Kōgen Highlands in the Shinshū region, these buckwheat noodles are produced using a unique irregular weaving method that creates raised textures on the noodles.
They are made with water from the Mount Mitake water system in the Kiso region.
These noodles, which do not stick easily, offer a new texture and a pleasant mouth feel.
