Founded in 1844, year 1 of the Koka era, Mizogami Brewery is a major representative of Kitakyushu, with a history of more than 160 years. The traditional techniques inherited since the foundation are still preserved by the master brewer, who perpetuates artisanal manufacturing with meticulousness, without sparing either effort or time. Sakekasu, the residue of sake after pressing, has long been appreciated for its nutritional richness. By balancing this nutritious Sakekasu with ginger and yuzu, we have created a vinaigrette with a light and delicately sweet taste.
