Preparation of Japanese Sencha (green tea)In Japan, tea is traditionally prepared in a special Japanese teapot called a kyusu. Japanese Sencha should be brewed in hot water (around 80°C to 90°C). It is at a lower temperature than most European teas.
Préparation- Boil water in a kettle. Pour the water into each cup you wish to serve. This will allow the water to cool to around 80°C for brewing.
- Put 1 teaspoon (about 6g/200tsp) of tea leaves into the kyusu for each serving you want to prepare.
- Pour the water from each cup into the kyusu teapot. Let the tea leaves steep for about 40 to 50 seconds.
- Use the kyusu to pour the tea into each cup. Be sure to use a filter if necessary.
