

“Pichitto” is a mysterious cooking film that enhances the flavor of ingredients. The secret of "Pichitto" lies in its "osmotic power", which consists of two special semi-permeable films, pierced with invisible holes, and a substance based on food syrup with high osmotic pressure and kelp (food glue ) which retains the absorbed moisture. This "osmotic pressure" removes excess water and odorous compounds such as ammonia and trimethylamine, smaller than water molecules, contained in seafood and meats wrapped in "Pichitto", all by trapping larger flavor compounds in ingredients to concentrate them.
