

This nigori sake is made exclusively from "Yamada Nishiki", a contract-grown rice. It offers a refreshing sensation thanks to the fermentation gases of the nigori, while revealing the refined aromas of junmai daiginjo. Its light flavor, resulting from the fermentation of the well-ripened moromi, perfectly accompanies this experience.
Unlike conventional processes, the moromi (must) is not completely removed during extraction, deliberately leaving deposits after a rough filtration. The yeasts present in these deposits produce fermentation gases, providing a unique sparkling sensation in the mouth.
