Hippari soba
This is soba made from yam root, with a smooth and pleasant texture. Shiraishi, at the foot of Mt. Zaō, is a region rich in nature, where pure mountain water and the "Zaō Oroshi" wind have shaped the "noodle village" for over 400 years. Although water wheels are rare today, the town's canals preserve its heritage. Producing "Shiraishi Umen" noodles is a great joy for them, symbolizing the transmission of traditional culture and human warmth, while perpetuating the spirit of that era even in a modernized world.
