Using sake brewing techniques and using only the finest sake rice, Yamadanishiki, this authentic rice shochu is distinguished by its pleasant ginjo scent. Since 1990, it has benefited from maturation by “successive aging”, which gives it a deep, rich and sweet flavor.
What is “successive aging”?
“Successive aging” is a maturation method where new shochu is added to the maturing shochu. This technique is similar to the “solera system” used for aged Okinawa island rum and sherry. Thanks to this method, the taste of shochu remains constant over the years, with stable sweetness and maturation quality.
About “Ejanon Onboraato”
Due to successive aging, the exact age of the original shochu is unknown, earning it the affectionate name "Ejanon", meaning "unknown age". “Onboraato” is a Kanazawa dialect term meaning “take your time”. This name reflects the desire to slowly savor the taste of a shochu that has matured patiently over the years.
